Cut from the center of the tenderloin, this steak is prized for its exceptional tenderness and delicate, buttery texture. It’s lean, refined, and incredibly elegant. Because it’s naturally mild in flavor, we recommend keeping preparation simple: a hot cast-iron sear, generous salt, and a finish with butter and fresh herbs.

Our beef comes from Angus cattle that are 100% grass-fed and grass-finished right here in Washington State — no grains, ever. These animals are raised on regenerative pastures, where their grazing nourishes the soil, strengthens root systems, and builds resilient ecosystems.

All of our cattle are raised without antibiotics. When animals live on pasture instead of in feedlots, they simply don’t need them.

Each package contains:
